The Mauting KMU Universal Chamber is a flexible solution designed to handle both primary fermentation and the subsequent maturing and drying phases of durable meat products. Whether you're producing with starter cultures, GDL technology, or traditional methods, the KMU chamber delivers reliable control across all stages of ripening and drying.

Compatible with electric, steam, or hot water heating and various cooling media (freon, antifreeze, or ammonia), this chamber offers maximum adaptability. It features a high-performance control system based on absolute humidity and enthalpy of outdoor air, enabling precise climate management and outstanding energy efficiency.

The chamber can run in continuous or intermittent modes depending on internal conditions. Optional alternating airflow systems (DAF1, DAF2, and CrossFlow) improve product uniformity, reduce surface overflow, and allow ripening to be safely accelerated by up to 20%. Each chamber is built to customer specifications for optimal integration into your production process.
